Most cutting boards are cut with the grain — you're slicing straight across long wood fibres, and every cut leaves a scar. End grain is different: the fibres stand on end, like a bundle of straws. A blade slips between them instead of across them, and the wood flexes back closed.
The result is a surface that's gentler on your knife edge and shows wear far more slowly. This one is hand-assembled from hundreds of individual walnut blocks, glued, pressed, and planed flat in a checkerboard pattern that's never quite the same twice.
It's also more resistant to warping than a board cut from one continuous slab. A single large piece of wood has nowhere to release the stress when humidity shifts unevenly across its face — that's why solid-slab boards are the ones most likely to cup or bow over time. Hundreds of small blocks, each glued on its own end-grain axis, spread that movement across hundreds of joints instead of concentrating it across one surface.

A light coat of food-safe mineral oil keeps the wood from drying and cracking. More often in the first few months.
Hand wash with mild soap, warm water, dry standing up. Prolonged soaking is the one thing end grain doesn't forgive.
Small surface marks from use are normal and expected — light sanding and re-oiling brings the surface back like new.
