Why chefs choose end grain

Most cutting boards are cut with the grain — you're slicing straight across long wood fibres, and every cut leaves a scar. End grain is different: the fibres stand on end, like a bundle of straws. A blade slips between them instead of across them, and the wood flexes back closed.

The result is a surface that's gentler on your knife edge and shows wear far more slowly. This one is hand-assembled from hundreds of individual walnut blocks, glued, pressed, and planed flat in a checkerboard pattern that's never quite the same twice.

Care

Living with it

Oil it monthly

A light coat of food-safe mineral oil keeps the wood from drying and cracking. More often in the first few months.

Never the dishwasher

Hand wash with mild soap, warm water, dry standing up. Prolonged soaking is the one thing end grain doesn't forgive.

It'll age well

Small surface marks from use are normal and expected — light sanding and re-oiling brings the surface back like new.

A note on Singapore's climate — wood moves with humidity, and Singapore runs consistently more humid than the dry Canadian winters this board was built in. That's normal, not a defect. Give it a few weeks to settle into the room it lives in, keep it away from direct aircon vents, and oil it slightly more often than you would elsewhere.
